In the course of a day in long-term care, Occupational Therapists and Speech-Language Pathologists will handle food.  This may be while training a patient for self-feeding, completing a diet texture analysis with a patient who has swallowing difficulty, assisting a patient in the dining room, or training a patient to prepare meals in the therapy kitchen.  Elderly individuals and those with compromised immune systems in our care have a high risk of developing foodborne illness.  This course provides training for employees in non-restaurant establishments to identify causes of foodborne illness, define ways to prevent food contamination, and describes best practices for handling food that is stored in the therapy kitchen and served to residents.  Educational level: Intermediate.
